My 7-year-old dog has eaten only jerky treats and human food its whole adult life and is very picky; I want to force a switch to dog food and cans—will that harm it, and is it used to the old diet? It refused cans and kibble before.

Dogs over 7 should eat senior food—easy to digest and lower in fat. Human food is salty and burdens heart/kidneys; if you keep it, rinse off some salt. If it refuses kibble/cans, mix a little into the old food and slowly raise the ratio.
Give it time to adapt rather than forcing the change abruptly.
